Do you love Buffalo Wings? Who doesn't? Sorry, this isn't a recipe for Buffalo Wings. We are going to mix it up a little and take all the awesome flavors of buffalo wings and recreate them just a bit. They'll still have a kick but they'll also be creamy, crunchy & delicious.
I promise these will be a hit at any party!
Buffalo Chicken Wontons
(Makes approx. 48 wontons)*
2 C. Shredded Chicken
1 Packet of Ranch Salad dressing (powder)
1/4 C. Scallions, chopped
12 oz. Cream Cheese
1/2 C. Franks Red Hot Sauce
1 1/2 C. Shredded Cheddar Cheese
12 oz. Packet of Wonton wrappers
*Any extra mix can be put into a oven safe dish and be baked as a Buffalo Chicken Dip or frozen for later use.
In a stand mixer mix the cream cheese, scallions, cheddar, ranch dressing & Franks Red Hot. Mix until incorporated. Fold in the chicken.
Scoop the mix into 1" balls. Place on a cookie sheet and put in the refrigerator to chill for about 20-30 min.* Once the mix is chilled start to fill the wonton wrappers. Work with 2-4 wrappers at a time. Brush all 4 sides of the wrapper with water (do not soak!) Place one of the buffalo dip balls into the center of the wonton wrapper and start folding. Bring two opposite corners of the wrapper together into the middle. Seal with a bit of water. Fold the the final two corners into the center. The final product should look like a square pillow. Make sure all the sides are sealed.
Place your oil into a pot, frying pan or deep fryer.....whatever you usually fry in. Heat the oil to 350-375ºF
When oil is heated, place the wontons in the oil and let fry until golden brown, about 1-2 minute per side.
Serve warm with Blue Cheese Dressing for dipping!
*I found that the easiest way to fill the wontons took some trial and error. This is an extra step but it worked out great.
Sorry for the lack of pictures. Because I played around with this recipe a few times until I had it right I had to piece the pics together.
Where are the wings? Don't worry you won't miss them.
