Irish Bread

There are alot of foods that I associate with different people. Blueberry Muffins? My mom. Anything Italian? My Nana. Homemade bread? My dad. Irish Bread? My Grandparents.

When I started to think about what I would prepare for St. Patrick's day I thought of Irish Soda Bread. How could I not post about this holiday favorite? When I asked for the recipe I was told that the "Irish Soda Bread" that I loved was not actually soda bread, It was just Irish Bread. Irish Bread is similar to soda bread but sweeter. I got the recipe and low and behold, no soda to be found.  Soda or not, It's still yummy, tastes great toasted and covered in butter and reminds me of Sunday nights at my Grandparents house. Enjoy!

Irish Bread
Makes (2) 8 inch breads

4 1/2 C. Flour
4 Tsp. Baking Powder
1 Tsp Salt
1 1/4 C. Sugar
1 Stick of Butter 
4 Tsp. Caraway Seeds
1 C. Raisins (Soften in warm water)
2 Eggs

Preheat oven to 325 degrees.

Mix together dry ingredients. Cut in the Butter with a pastry cutter.  Add the raisins and caraway seeds, mix until dough comes together.

Crack 2 eggs into a 2 cup measuring cup.  Pour milk over the eggs until the liquid reaches the 2 cup mark.

Add the egg/milk mixture to the dough and mix by hand.  Mix well.

Split dough between two greased 8 inch pie dishes.  Bake for 1 hour.

I didn't do the step by step pictures for this recipe.  I started to prep all of my ingredients and one of my prep cups dropped on the kitchen counter and cracked in 1001 pieces.  After cleaning and measuring out all the ingredients for a 2nd time, I was so annoyed that I forgot to take all my pictures while mixing the dough. My apologies!

Time to make some Irish Bread.
Split the dough between two prepared 8 inch pie dishes & pop in the oven.
Yummy.  It was hard to wait for this too cool off. I couldn't wait to dig in.
To make this Irish bread extra Irish, grab some Irish Butter!
This is my favorite way to eat Irish Bread! Toast it up and add some Butter!
