Yummy! I love Guacamole. 

Is there anything better than sitting down with some ice cold margaritas and some chips and salsa or homemade guacamole?  I don't think there is.  I would be craving some right now but I got my fill over the weekend!

This recipe is really quick and easy and can even be made in one bowl for easy cleanup. 
Two items to note:
1. I don't use cilantro in my guacamole recipe.  Sorry, I'm not a fan.  Now I know most of you probably love cilantro and want it in your guacamole and that's fine. Go crazy and add some chopped cilantro if you want, but you won't find it listed in the ingredients below.
2. I do add spices to this recipe but I get them out of a.......taco seasoning packet.  I know, a little lazy but very convenient.  Taco seasoning has everything you need, cumin, chili powder etc.  I usually choose Ortega or Old El Paso.  I go with one of these two because the spice mix is light in color.  If you chose a spice mix that's too dark it will darken the the color of the guacamole.  Feel free to make your own mix of spices if you don't want to go the Taco direction.

OK let's get started.

Makes Approx 2 Cups.
2 Ripe Avocados
1 Lime
2 Tbsp. Red Onion, diced
1 small Tomato, diced (about 3 Tbsp.)
1 Tbsp. Garlic, chopped fine
1 Tbsp. Taco Seasoning 
1 Tbsp. Jalapenos, diced (I use the nacho ready jalapenos found in the Mexican food aisle of the supermarket)
Sea Salt (to taste)

Prep and dice/chop the red onions, tomato, garlic & jalapenos.  Measure out the the Taco Seasoning.

Slice avocados lengthwise in half and remove pits. Score flesh and scoop into a bowl with a spoon. Mash with a fork to brake up the avocado. Don't over mix, you will want to have some big chunks of avocado.  Squirt 1/2 of the lime over the avocado and stir.

Fold in the red onions, garlic, jalapenos and Taco Seasoning. Fold in the diced tomatoes. Squeeze the the rest of the lime over the guacamole and mix. Add a sprinkle of sea salt to taste. Refrigerate until ready to use.
Let's make some Guacamole!
Slice avocados lengthwise and remove the pits.
Score the avocado and get ready to scoop.
Into the bowl you go.
Ready to add some flavor?
Squeeze the lime over the avocado.
Mash up with a fork.  The mix doesn't have to be smooth.  Leave some chunks.
Add in Red Onions, Garlic, Jalapenos, & Taco Seasoning.
Fold in the tomatoes. 
Yummy. Time to dig in. Serve with Tortilla or Pita chips
Maybe I am craving some guacamole.
