Birthday Pancakes

How about a Just for Fun Recipe?

I was flipping through my August issue of Everyday with Rachel Ray and noticed a segment called Cake gets Cuter.  One of the recipes included was Birthday Pancakes!

Basically you mix a box of your favorite cake mix, fry up the batter in a skillet and top with some frosting and sprinkles.  

I tried this recipe over the weekend and I can tell you it's kid tested and approved.  My nieces and nephew loved this crazy concoction.  The recipe is easy enough that kids can help with the prep and decoration.

Birthday Cupcakes would be great as a birthday breakfast surprise, a twist on a traditional birthday cake or a special treat for any pancake lover in your life!

Birthday Cupcakes
From the August 2011 Issue of Everyday with Rachel Ray

1 Box of Cake Mix (Your favorite flavor)
1 Can Frosting (Ditto, Pick your favorite brand and flavor)
Nonpareils or Sprinkles (optional)

Prepare cake mix according to to directions on the box. Once cake is mixed add in 1 Tbsp of nonpareils or sprinkles.  Stir until combined.

Heat a skillet/griddle and coat with butter, margarine or non-stick spray.

Ladle the batter onto the heated griddle. Cook 2-3 mins until bubbles start to form on top. Flip and cook an additional 2-3 mins.

Once all the pancakes are complete get ready to frost.

Remove cover and foil protector from your can of frosting and pop in the microwave to make pourable.   Heat in 20 second intervals.  

When the frosting is ready to pour, start stacking the pancakes, drizzling each layer with frosting and sprinkles. Cover the top pancake with frosting and finish with sprinkles and a candle!

Start singing, cut and serve!

Can't go wrong with Yellow cake mix and Funfetti!
Add in your nonpareils or sprinkles.
Heat your griddle and coat with Butter or Margarine!
Pancake 1 is up!
All done, ready to stack and decorate.
Make a wish.
Slice and serve. This little 6 year old, blue finger nailed girl couldn't get enough!

Thanks Becky. We had a great time making them and truth be told I just love about anything with Funfetti frosting! ;)
