Broccolini with Garlic and Parmesan


Who wants some Broccolini


What's Broccolini you ask? I could tell you it's broccoli's cousin, but lets hit Wikipedia instead:


Broccolini is a green vegetable similar to broccoli but with smaller florets and longer, thin stalks. Although often misidentified as young broccoli, it is a cross between broccoli and Kai-lan, Chinese broccoli. Broccolini's flavor is sweet, with notes of both broccoli and asparagus.


This recipe has tons of flavor and a just a few ingredients. It can be cooked up super quick too. It is great as a side dish or mixed with pasta.


My mom has been asking me to post this recipe so here it goes.


Broccolini with Garlic and Parmesan

2 Bunches of
Broccolini, rinsed and ends trimmed
1/2 C. Low Sodium Chicken Broth
1 (heaping) Tbsp. Garlic, minced
1/3 C. Parmesan Cheese, grated

1 Tbsp. Olive oil


Drop the  broccolini In a pot of boiling water for approx 3 minutes.  


Remove from the water and transfer to a saute pan.  Over medium heat, add the chicken broth, let the broccolini cook for 5-7 minutes until the greens start to wilt or the stems are fork tender. 


Reduce the heat to low and add the olive oil.  


Add garlic and toss. Finally add the Parmesan cheese, toss and serve.

4 Pots of Flavor - Chicken Stock, Parmesan Cheese, Garlic & Olive Oil.
Toss into the pan with the chicken stock.  Cook over Medium heat from 5-7 min.
Add the Olive Oil and Garlic. Keep the temp low. You don't want to burn all that beautiful garlic.
Now toss in the Parmesan Cheese.

Remove from the heat, serve and enjoy!
