Fluffernutter Bars

Fun Friday Fact!

Marshmallow Fluff was created in 1917 by inventor and Somerville, MA resident Archibald Query.

In honor of this weekends Marshmallow Fluff Festival in Union Square, I thought I would post a Fluff related recipe.

Fluffernutter Bars anyone?

Peanut butter & Fluff? We can't go wrong here!

Peanut Butter Cookie Base, Fluff, Peanut Butter Mix and more!  I used a Betty Crocker PB Cookie Recipe but feel free to use your favorite PB cookie recipe if you've got one.

Let's get started

Fluffernutter Bars

Peanut Butter Cookie Base
Adapted from Betty Crocker
1/2 C. Sugar
1/2 C. Brown Sugar
1/2 C. Peanut Butter (Crunchy or Smooth)
1/4 C. Butter Flavored Crisco
1/4 C. Butter or Margarine, softened
1 Egg
1 1/4 C. Flour
3/4 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/4 Tsp. Salt

Peanut Butter Mix
1 C. Peanut Butter (Smooth or Crunchy)
2 C. Confectionery Sugar
2 C. Graham Cracker Crumbs
1 C. Margarine, melted
1 Tsp. Vanilla Extract

1 C. Marshmallow Fluff
1 C. Mini Marshmallows

Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.

While the cookies are chilling make the PB mix.  In a bowl mix the peanut butter, confectionery sugar, melted margarine, vanilla, and graham cracker crumbs.  Mix until all the ingredients come together. 

Preheat oven to 350. Grease a 9X9 baking pan.

Spread 3/4 of the cookie dough into the base of the pan evenly.  Reserve the remaining dough to crumble on top.

Spread the Marshmallow Fluff on top of the cookie dough spreading to the edges of the pan.

Spread the Peanut Butter mixture into a layer over the Fluff.

Crumble the remaining cookie dough over the PB Mix. Top with the mini marshmallows and pop in the oven.

Bake for 25 min.  Let the cool completely.  If you cut while warm the Fluff will ooze and be very messy,but still delish!  Be patient!

Mix up the PB Cookie Base.

Yum. Peanut Butter Mix Ingredients.
Spread the PB Cookie Recipe into a prepared pan.
Spread on the Marshmallow Fluff.
Next layer is the PB Mix.
Sprinkle with the remaining cookie dough.
Finally top with Mini Marshmallows.
Hot and bubbly from the oven. Remember BE PATIENT!
