Holiday Whoopie Pies

Sorry that' I've been gone for soooooo long but I'm here now and I have a fun, easy, quick Whoopie Pie recipe that you'll love. This one is a keeper and it is very versatile (Go crazy! Any flavor cake mix, any flavor pudding and any flavor filling).  Away we go......

Holiday Whoopie Pies
Makes Approx. 25 Whoopie Pies
1 Box of Holiday Funfetti Cake Mix
1 Box of Vanilla Instant Pudding
1 Can of Frosting
Whipped Cream 
Holiday Sprinkles/Non-Perils/Sanding Sugar

Preheat your oven to 350.

Prepare your Funfetti Cake mix according to the directions on the box. Beat until the ingredients are Incorporated.  Add 1 box of Vanilla Pudding and stir into the cake mix.  Beat with an electric mixer until no lumps remain.

Line baking sheets with parchment paper or non stick cooking liners.  Using a small cookie scoop, evenly space the batter (about 12-16 per sheet) on the baking sheet. Do not let the batter spill out over the top of the scoop. To ensure uniform whoopie pies this is the best bet.  

**Bonus!** It will be easy to match up the whoopie pies when filling them up!

Bake 12-14 minutes. Remove from the baking sheet and let cool. 

While cooking, fill a pastry bag or a Ziploc bag with frosting and get ready to fill.   If you are using the Ziploc method fill the bag with your frosting and seal the bag.  Squish the frosting into one corner of the bag and snip at the corner. Viola! Instant pastry bag.

When the whoopie pies are cool, match'em up for easy filing. If you followed my instructions about the cookie scooping you should have perfectly uniform whoopie pies. ;)

Each pie will take about 1 Tbsp. of filling or more if you like lots of frosting.  Fill all of the Whoopie pies like you're making a sandwich. Bottom, frosting, top, repeat. Roll edges in your festive decorations.

If you use whipped cream you should fill right before serving or better yet let your guests serve themselves!

Holiday Whoopie Pies are easy and fun!
Funfetti Cake Mix! Mix according the directions on the box and then add your pudding! The pudding will make your finished product moist and delish!
You'll get a slightly thicker cake batter!  This is what I use to scoop out the Whoopie Pies. Don't over fill the scoop. Fill and drag along the side of the bowl to get the same size scoop each time. 
Ready for the oven.

Fill the Whoopie Pies with your favorite frosting.
Top off with another pie and squeeze just a bit to make sure both sides stick.
Roll edges in some holiday sprinkles for a festive finish!
You can use some sanding sugar or.....
Holiday Sprinkles.
Instead of frosting how about some Whipped Cream? 
If you are using the whipped cream fill just prior to serving.
